Does anyone know if any of the routers, especially the Peplink MAX BR1 Pro 5G , will work with a Telcel SIM card in Mexico? Thank you.

Yes, it should work with both 5GH and 5GD versions.
However, Telcel has some cellular plans restricted to only work with Telcel modems. So, you need to get a sim with no IMEI limitations plan.
