The data sheets specify the diameter of the connecting cables for the Maritime 20G and 40G antennas. It’s not clear how many cables there are for each model. How many cables does the Maritime 20G have? The Maritime 40G?

The Maritime 20G has 3 cable (2 cellular + GPS) and the Maritime 40G had 5 cable (4 cellular + GPS).
20G = 2 Cellular + 0 Wifi + GPS 1
40G = 4 Cellular + 0 Wifi + GPS 1

Can the antennas be used for WiFi WAN as well? If not, why not?

Yes - they can be used as Wifi antennas as well, they cover these frequencies. But you would need an adapter from SMA to R-SMA to connect to the Wifi connectors in the Peplink router.
