For LTE, two antennas are mandatory if you want to take full potential in terms of signal quality and throughput. Using just one antenna will disable the advance signal processing benefits you can achieve with MIMO antenna technology and decrease downlink throughput.
With even higher throughputs, more antenna channels are required.
