could you please briefly describe what is the benefit and usage of this “IP ToS” option in PepVPN profile ?

PepVPN WAN traffic will have IP ToS field set to the same value as your data packets, it will not interpret the ToS field value at all.
This is only useful if your data packets have ToS field data, and you want the same ToS values to appear on the PepVPN traffic. Which will then be sent to WAN.
