I have 1 Balance 380 and 2 Balance 30 LTE.
From time to time I get a message Balance XXX: System: Started up (6.2.0 build xxxx)
What does this mean and when does this happen?

This is the normal message displayed when the device is powered up or rebooted.
How comes the balance rooter send this messages randomly from time to time? None has manually triggered a reboot.
Is the device loosing power for some reason? Please try to monitor the behavior and symptoms and you can open a support ticket if needed:
