We need 1gig VPN between office and data center. With Speedfusion can we hit 1GB/sec with a model like the Peplink 710 or do we need to go up to a 2500.

In order to tell the speeds that each device can handle for 256-bit AES encryption and for No encryption, you can look at those respective bars on the comparison chart. For the 305 and up, the throughput is the same for encrypted and no encryption.
For a 1Gbps you would need to use the 2500 on both ends. The 1350 is able to support 800Mbps, if you have any room to work with for going under 1Gbps.
