NATing Local VPN subnets to a Local IP

I have a customer requirement to NAT local subnets to a specific private IP before the traffic is sent over a IPSEC tunnel. Does anyone know if this is possible and how it would be achieved?

Virtual Network Mapping on LAN > Network Settings page works as well, and this one will apply for most connections with remote peers.

You can enable the feature in the Help icon of Static Route Settings:

Then the Virtual Network Mapping section will pops up:
