I am not in United States… But… I can see the 5G mobile is very poor.
Are you using external antena? like MOB40g?

I am using an omni antenna (Pepwave 42G), yes.

The main issue…
It is, maybe your device it is too far from a good mobile 5G provider.
OR in a place where it cannot get a strong 5G signal.
And…
The latency result of your device it is too high.
Look at this sample…
The standard latency for LTE (4G) it is around 38ms.
When you share the screen Wan Quality of your device… It is in use? It is broadcasting something?
I just went back and took a screenshot when I started the router and connected my lapto to run seed tests from the location I will be streaming from.
You can check on cellmapper site what cells with what bands located near you and you will understand what happened. May be cell with 41 band located far from you and LTE near.
